This plateau is a bountiful agricultural field full of olive grove, wheat fields, and fruit trees feeding Fez with good quality organic food. Only about a half hour away from Fez, our first stop will be in Bhalil. Bhalil encloses type of architecture that dates back to the pre-Islamic era. The carved cave houses on the mountainside give Bhalil a unique destination for those who seek real exotic experiences apart from all other towns in Morocco. They play an important role in its urban architecture. They have housed innumerable generations of Moroccan families. Today, most families moved out of the cave houses to live in modern residences. Still, a few old timers hang on to their cave houses keeping a millennia-old lifestyle. In less than a 5km drive down the road from Bhalil, we will have the rest of the day to explore many charms the town of Sefrou offers. Sefrou claims greatness making Fez lay in the shadows of its rich history and civilization. It is ‘the garden of Morocco’ according to its French settler during the protectorate. Sefrou’s fame arrays with a proud tradition tolerance. It enclosed a large Jewish, Arab, and Amazigh populations during times where no one of them felt as safe as inside its fortified walls. It has rich agricultural lands in its surroundings. During our visit to Sefrou, we will explore the Mullah. Now abandoned, it housed a large Jewish neighbourhood in the middle of the old town. Then we will explore the old town a bit, following the river of Oued Agay gorge that cuts through the century old houses. Its small beautiful bridges stitch back together the centre of Sefrou’s ancient medina. Our next stop is the waterfall upstream from the old town. Then we will drive uphill to visit a panoramic viewpoint over Sefrou and its surroundings. We will finish our journey making a stop by the oldest fortified neighbourhood of Sefrou, the walled Kasbah. At the end of our time journey in Sefrou, we will take the highway directly back to your accommodations in Fez.
